Going Gluten Free & Protein Pancake Recipe

Almost three weeks ago after lots of research and as a result of recent health issues I decided to go GLUTEN FREE. With a diet that consisted of mainly bread, pasta and croissants, the thought of being without either of these almost broke me into a cold sweat. Luckily there are many gluten free alternatives out there (Aldi, Lidl) which means I can still have bread and pasta. 

However, as the weeks progress, I have found that  fruit and vegetables have become a daily staple for me. I now make healthier food choices, eat less processed foods and lots of fruit and veg which is a win win in my opinion. I'm not an expert on this subject and there are those that think this is just a fad  but I personally have been feeling much better so if it's working for me then I'm going to continue it! If it means you're eating more fruit and veg and less processed crap and an all round balanced diet then surely it isn't fad!?

I think it's important to know that you can still have an intolerance to gluten even if you've been tested for Coeliac Disease and the results are  negative. 
The most important thing I have learned from this and think most people should think about is this: 
If you eat natural and unprocessed foods then your diet will naturally be GLUTEN FREE!



I also believe that breakfast doesn't have to be boring when you cut out most breads and ditch the toast. This morning I cooked a Protein Pancake for the first time in weeks and it was delicious.

Ingredients
1 Egg
1 Banana
1tbsp of Oats (gluten free)

Method
1. Chop banana, add to a bowl and mash with a fork until mushy.
2. Add egg to banana mixture and whisk together.
3. Add oats and mix throughout.
4. Heat pan and cook on a medium temperature, flipping occasionally until cooked (5-7 mins).

I served my pancake with a spoonful of greek yogurt, a handful of blueberries, a handful of trail mix and a sprinkle of honey and cinnamon.
